Peanut Butter Banana Breakfast Cookies

Yields 18 cookies

Prep Time 10 minutes

Total Time 35 minutes

2 ripe bananas

1/3 cup peanut butter (chunky or creamy)

2/3 cup unsweetened apple sauce

1 tsp vanilla extract

1 1/2 cups quick cooking oats

1/4 cup chopped nuts

1/4 cup chocolate chips (optional)

1. Preheat oven to 350 degrees

2. In a large bowl mash the bananas and peanut butter

3. Add applesauce, vanilla, oats, nuts and chocolate chips

4. Combine and let mixture rest for 10 minutes

5. Drop dough by spoonfuls on a cookie sheet lined with parchment paper and press each cookie to flatten

6. Bake for 25 minutes and enjoy!
